It is an ancestral tradition of the indigenous Peruvians, more precisely of the Aymara, a people who discovered that by boiling the potato, cutting it into cubes, drying it in the sun and preserving it free of humidity, the useful life of the product could be prolonged for years. This proved invaluable in supplying the community's needs in times of crop failure. They also found that storing and transporting the dried potato was much easier than storing the original product. Since then, it has been a food deeply rooted in Peruvian culture, not only because of its long shelf life, but also because of its delicious flavor and gastronomic possibilities.
